
Ingredients (for a single serving):
- 4-5 oz ground turkey
- 1 zucchini
- 1 yellow squash
- 1 small eggplant
- 1 can Hunts No Salt Added Diced Tomatoes with Basil, Garlic & Oregano
- Sprouts Shredded Part Skim Mozzarella
Directions:
- On the stovetop, brown your ground turkey.
- Once turkey is fully cooked, add in 1/3 cup Tomato sauce, allow to simmer on low for about 15 minutes.
- While turkey is simmering, slice your veggies. **Your veggies replace pasta noodles in my recipe so be sure to slice them thin enough to layer. I slice mine about 1/8 inch thick.
- Cover the bottom of a small pan with ¼ cup tomato sauce (I used a bread loaf pan).
- Add a layer of sliced eggplant.
- Add a layer of yellow squash.
- Add a layer of zucchini.
- Next add your ground turkey.
- Add diced tomatoes so that they evenly cover the last payer of zucchini.
- (repeat layers if you have additional veggies – you can never have too many veggies!)
- Top with Mozzarella cheese.
- Bake on 400 for 20-25 minutes (oven times will vary) until veggies are tender and fully cooked.
